A Special Sake Commemorating the 400th Anniversary of the Brewery’s Establishment
Junmai Daiginjyo Fukukomachi
A special masterpiece of a sake, made from 100% supreme grade Yamada Nishiki varietal rice from Hyogo Prefecture, known as the pinnacle of sake rice. The rice is polished down to as low as 26%, a level never before attained at Kimura Brewery and meticulously brewed in small batches weighing 400 kg to match the number of years the brewery has been in operation. The finished product is a sake of refined purity with a light umami of rice which harmonizes with the other elements of flavor. The Kimura family crest placed at the center of the label has been individually varnished by craftsmen of Kawatsura Lacquerware, a traditional handicraft of the Yuzawa region handed down over a period of 800 years.
A Limited Production of 100 1.8L and 400 720ml bottles. Serving temperature: hana-hie (50F range).
